Chef resumes live on three anchors per role: venue type (fine dining / hotel / restaurant group / catering), kitchen size (brigade count, covers per service, seats), and cost performance (food cost %, labor %, waste). Recruiters calibrate experience almost entirely on venue prestige and kitchen scale, so naming both precisely in each role is more valuable than elaborate bullet prose. Certifications and menu credits go after experience, not in a summary.
How to write a strong chef resume
- 1Open each role with the triple: venue-type + seats/covers + brigade size. 'Sous Chef, Michelin-starred modern European, 60 seats, 9-person brigade' beats 'Sous Chef at [Restaurant]'.
- 2Quantify cost performance where you owned it: food cost %, labor cost %, waste reduction. These are the KPIs GMs and owners care about first.
- 3List menu-development credits with names, not just counts: 'Developed tasting menu for autumn 2024 (7 courses, 4.6 average review)'.
- 4Mention high-volume periods honestly. 400 covers on a Saturday is a resume-worthy signal.
- 5Certifications — ServSafe, HACCP, allergen training — go at the bottom in a named block. They're required, not persuasive.
